Matomani ya Xihuku
Ingredients:
- 1 medium pumpkin, peeled and cubed
- 2 tablespoons peanut butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 4 cups water
Instructions:
- In a large pot, sauté the chopped onion and garlic until soft and translucent.
- Add the cubed pumpkin and sauté for another 5 minutes.
- Add the water, salt, and ground cumin. Bring to a boil, then reduce heat and let it simmer until the pumpkin is soft.
- Once the pumpkin is cooked, use a potato masher or blender to mash the pumpkin to your desired consistency.
- Stir in the peanut butter until well combined. Simmer for another 5 minutes.
- Serve hot as a stew or soup.
